1.

Bhel Puri

Bhel Puri is hands down the most loved street food ever. It is not only simple and quick to make, this sweet and spicy chaat will leave you craving for more.

Ingredients

2 cups of puffed rice
1 medium onion- finely chopped(optional)
1 tomato-chopped
1 boiled potato- peeled
Chopped coriander leaves
1 cup sev
1 green chilli-finely chopped
2 tbsp mint-coriander chutney(optional)
2 tbsp tamarind chutney(optional)
2 tbsp peanuts.
1 tsp chaat masala
Table salt and black salt to taste

Instructions

Dry roast the puffed rice to make it crispy and remove any water content from it. Set it aside to cool down while mixing all the other ingredients together. Add the roasted puffed rice in the last to avoid it getting soggy. If you wish you need not add the chutneys to keep the bhel puri dry. Mix the ingredients well and serve instantly.

Bread Omelette

This healthy breakfast is rich in protein and is exactly what one needs to kick start their day.

Ingredients

4-5 bread slices
3-4 tbsp oil
4 eggs
1 small onion-finely chopped
1 green chilli finely chopped
½ teaspoon ginger garlic paste
Salt and black pepper powder as required

Instructions

Heat the oil in pan while you prepare the egg mixture. To prepare the egg mixture, beat the eggs and add the chopped green chilli, onion and ginger garlic paste. Once the oil is heated dip the bread slices in the egg mixture and cook it on pan. Once the egg is properly cooked, serve by cutting them diagonally with either ketchup or mint-coriander chutney.

Poha

Poha is one of the most famous delicacies of the state Maharashtra. This dish is packed with taste and makes up a wonderful evening snack or breakfast.

Ingredients

2 cups chiwda (flattened rice)
3 medium onions-finely chopped
2 green chillies- finely chopped
1 tsp mustard seeds
1 tbsp fried peanuts
4-5 fresh curry leaves
½ tsp turmeric powder
2 tbsp oil
Chopped coriander leaves
Salt as required
1 tbsp lemon juice

Instructions
Wash the chiwda with water and keep it aside. Heat the oil in a pan. Add mustard seeds and sauté them for a while. Make sure that they don’t get burnt. To this, add peanuts, curry leaves, finely chopped green chillies, and onions and sauté. Let the onions turn golden-brown and add salt, sugar, turmeric powder, and flattened rice to the mixture. Mix the ingredients together, but cautiously as to not break the flattened rice. Add the coriander leaves and the lemon juice, mix and cook for a while. Turn off the flame and serve hot.

Upma

Upma is an irresistible South Indian dish which is loved by people of all ages. This dish is very simple and plain, and great for your health.

Ingredients

1 cup semolina
1 tbsp oil
1 tsp mustard seeds
4 curry leaves
2 finely chopped green chillies
1 medium onion-finely chopped
Chopped coriander leaves
Salt to taste

Instructions
Dry roast the semolina for a while and keep it aside. Heat oil in pan. Fry mustard seeds and curry leaves. While they crackle, chop the onions. Add the chopped onions and sauté till the onions are cooked. Add the roasted semolina and salt and mix for a while. Add about three cups of water and cover. Let it cook for a while and once it’s cooked, add the lemon juice and garnish it with the coriander leaves. Serve hot with coconut chutney or it tastes great plain too.

Ingredients

1 cup of milk
½ cup oats
2 tsp Sugar (optional)

Instructions
Heat the milk in a pan on a low flame for a while. Add the Oats and sugar to the milk and mix for a while. Turn off the heat and serve hot or let it cool down if you wish to have it otherwise.

Ingredients

1.5 cup corn kernels
¼ cup green peas
¼ cup chopped carrots
1 spring onion- finely chopped
1 tbsp butter

Instructions
Wash and chop all the vegetables finely. Heat the butter in a pan and sauté all the vegetables except the sprigs till they become soft on a low flame. Take a pot and boil three cups of water into it. If you wish, you can also add mix a little corn starch to it. Add the vegetables, salt, and the sprigs to the water and cook for a while. Turn off the heat once the soup is cooked and serve hot.

Egg Salad

This salad is a loaded with goodness of egg proteins and taste. Just toss together boiled eggs and some veggies and you’re good to go.

Ingredients

2 hard boiled eggs
1 small onion-finely chopped
1 medium capsicum- finely chopped
1 tbsp mayonnaise
½  tsp pepper
Salt to taste

Instructions
Take a pot and boil the eggs in it. Once the eggs are done, peel them and mash them with a fork.
Chop down all the veggies and add the mashed eggs and salt. Add the mayonnaise and mix well.

Ingredients

1 Cup Boiled White Rice
2 cups of curd
1 tsp. Ginger-finely chopped
1 tsp. mustard seeds
½ tbsp oil
4-5 curry leaves
1/2 tsp. Salt

Instructions
Heat the oil in a saucepan and the mustard seeds and curry leaves . Sauté them for before adding the finely chopped ginger. Let them cook for a while. Turn off the heat and add the boiled rice, salt, and curd. Mix well and serve.

Veg Paneer Sandwich

Sandwiches are loved by everyone. They are simple but full of flavour. This simple dish is made by stuffing paneer and vegetables between two layers of bread.

Ingredients

4 slices of bread
1 finely chopped onion
1 finely chopped capsicum
50 grams paneer( cottage cheese) either finely chopped or mashed
2 cheese slices
½ tbsp butter

Instructions
Layer the bread slices with cheese and the finely chopped veggies and paneer. Cover it with the second layer of the bread and smear some butter on the outside of the top and the bottom layer of the sandwich. Grill the sandwich on a pan for a while and its good to eat!

Khichdi

Khichdi can be made in a number of different and delicious ways. This particular version is the most basic one, but tasty at the same time. All it needs is a few basic ingredients and you’ll have a very satisfied tummy.

Ingredients

2/3 rd cup of rice
1/3 cup of moong dal
4 cups of water
1/8 tsp turmeric powder
1 tsp oil
1 tbsp ghee
Salt to taste

Instructions
Wash the rice and the dal thoroughly in a bowl. Add the washed rice and daal and the other ingredients in the pressure cooker and mix. Close the lid and let it cook for four whistles. Let the pressure out when it’s done before opening the lid. Once it’s done serve hot with fried or roasted paper and plain curd.

Ingredients

2 eggs
1 finely chopped onion
1 finely chopped capsicum
1 finely chopped tomato
1 tbsp oil to cook

½ tsp pepper

Take a bowl and beat the eggs in them. Add all the finely chopped veggies and the salt and pepper. Mix properly. Heat the oil in a pan before transferring the mixture of beaten eggs and vegetables into it. Let the batter cook on one side before scrambling the mixture into small parts. Sauté the contents of the pan till the eggs are cooked. You can have it with chapattis or rice or just plain.

2 Large potatoes
1 Large Onion chopped
1 tsp cumin seeds

Wash and peel the potatoes before chopping them into thin stripes. Heat the oil in a pan. Once its heated, add cumin seeds. Let it crackle. Add the chopped onions and sauté for a while. Once the onion turn golden brown you can add the chopped potatoes to it. Add salt and turmeric powder, mix well. Cover and cook on low flame until the potato softens. Have it with rice or chapatti.

2 cups of sprouted moong beans(Vigna Radiata)
1 medium tomato-chopped
1 small onion-chopped

1 green chilli-chopped
½ tsp chaat masala (optional)
1 lemon
Chopped coriander leaves

Rinse the sprouted moong in water and boil them until they are properly cooked. Strain the cooked sprouts and all the other ingredients. Add lemon juice and mix well. Your healthy sprout salad is ready to eat.

1 cup grated cheese
1 medium capsicum-finely chopped
4-5 bread slices
1 medium onion-finely chopped
2-3 medium sized boiled potatoes
1 tsp black pepper
½ tsp red chilli powder
Salt as required
Oil as required

Instructions
Mash the boiled potatoes and add all the other ingredients together. Mix it well. Dampen the slices of bread and squeeze the extra water from them. Put the mixture in the centre of the bread slices and roll them up. Squeeze the edges shut to prevent the fillings from spilling out while frying. Poor oil in a pan and heat it. Fry the bread rolls in the pan till they become golden in colour. Enjoy the cheesy and crispy treat with ketchup or chutney of choice!

Garlic Cheese Bread

Garlic Cheese Bread is the showstopper. It’s hot and spicy and loaded with cheese and you’ll absolutely love it!

Ingredients

3-4 slices of bread
1 cup grated cheese
8-10 garlic pods- finely chopped
1 tbsp chilli flakes
2 tbsp softened butter
½ tbsp oregano
Oil as required

Instructions
Mix the softened butter and minced garlic pods well and apply generously on one side of bread. Sprinkle cheese, chilli flakes, and oregano on them. Heat a pan and place the slices on it. Take the slices off the pan once the edges are toasted and the cheese has melted. Serve hot with Ketchup.

2 Zucchinis
1 small onion-finely chopped
1 tbsp Parmesan cheese
2-3 garlic pods
½ cup flour
1 egg

Peel and grate the Zucchinis. Mix all the ingredients together to form a doughy paste. Heat oil in pan. Scoop the mixture and drop it on the pan. Sauté both the sides till they are properly cooked. Serve hot.

2 cups dosa batter
1 small onion-finely chopped
1 medium tomato- finely chopped
Coriander leaves-finely chopped

Black pepper as required
Oil as required

Instructions
Heat oil in pan. Scoop dosa batter and spread it on the pan. Make sure to scoop a large amount of batter to make the Uttapam thick. Mix all the other ingredients in a bowl and sprinkle them on the uncooked side of the Uttapam. Once the base is cooked, flip the Uttapam to cook the other side. Cook both the sides properly and serve hot.

Ingredients

1 cup cooked rice
1 small onion- finely chopped
50 gm peanuts
50 gm dry coconut
½ tsp powdered chilli
1 tsp cumin seeds
1 tbsp oil
Salt as required

Instructions
Take a pan and heat oil in it. To this heated oil add the cumin seeds. Let the seeds crackle. Add the onions, pieces of coconut and peanuts and fry until they are golden brown. Add salt and chilli powder and sauté for a while before adding the cooked rice. Sauté the mixture well. Turn off the heat. Serve hot.

Ingredients

1 cup gram flour
½ cup wheat flour
1 small onion- chopped
1-2 garlic pods
Salt to taste
1 green chilli- finely chopped
½ tsp red chilli powder
About 2 cups of water
Oil to cook

Instructions
Take gram and wheat flour and add water and mix well to make a paste. Add onions, salt, coriander leaves, chopped green chillies and red chilli powder to the paste. Heat oil in pan. Once the oil is heated, pour the batter on it. Fry both the sides till they turn brown.
