
1.Amrakhand

Ingredients:
- Three cups hung curd
- One cup powdered sugar
- ¾ cup mango pulp
- Two teaspoon cardamom powder
Method:
- In a bowl, whisk the hung curd until it becomes creamy.
- Add the sugar and mango pulp.
- Put it to chill in a refrigerator. Top it with cardamom powder.
2.Panha

Ingredients:
- Four raw mangoes
- 2 tbsp jaggery
- One tsp cumin powder, roasted and pound
- Two tsp chaat masala
- Rock Salt to taste
Method:
- Pressure cook the raw mangoes. Peel and extract their pulp.
- Mix water with the pulp and put it to cook.
- Add the spices and the jaggery. This reduction is the panha.
- Mix with water and consume
3.Aamras

Ingredients:
- Two ripe mangoes
- 2 tbsp milk
- One tsp cardamom powder
Method:
- Peel and dice the mango into chunks.
- Blitz the pieces with milk. The Aamras should be of thick consistency.
- Mix the cardamom powder.
4.Mango Tapioca Pudding

Ingredients:
- One cup Tapioca, soaked overnight
- Two large, ripe mangoes
- 2 tbsp milk
Method:
- Cook the tapioca in water until it turns transparent. Keep aside to cool.
- Peel and chop the mango into chunks. Blend the mango and milk.
- Mix the mango pulp and tapioca.
- Serve chilled.
5.Instant Mango Pickle

Ingredients:
- Four raw mangoes
- 2 tbsp pickle masala
- 1 tbsp oil
- Salt (optional)
Method:
- Peel and cut the mango into slices.
- Heat the oil. Add the mango slices to the heated oil.
- After sautéing for a little while, add the pickle masala.
- Let it cook on a slow flame.
6.Mango Chutney Using Ripe Mangoes

Ingredients:
- Four small ripe mangoes, peeled and chopped
- Two tsp red chili powder
- One tbsp tamarind paste
- One tsp garlic paste
- One tbsp jaggery
- Salt as per taste
- 1 cup freshly grated coconut
Method:
- In a blender, add the jaggery, coconut, tamarind paste, salt, garlic paste and red chili powder.
- Add the blender mix to the mango chunks and mix thoroughly.
7.Mango Falooda

Ingredients:
- One cup mango kulfi
- ½ cup falooda
- 1 tbsp basil seeds
Method:
- Boil water and add falooda to it. Allow it to cook.
- On a serving plate, arrange the mango kulfi.
- Top it with falooda and bloomed basil seeds.
8.Mango Kadhi

Ingredients:
- One cup mango puree
- Four cup buttermilk
- 2 tbsp besan
- One tsp red chili powder
- Two tsp oil
- One tsp mustard seeds
- Salt as per taste
Method:
- Heat the oil in a kadhai, crackle the mustard seeds.
- In a bowl mix the besan, spices and some water. Beat it. Add buttermilk to the mixture.
- Pour this mixture into the kadhai and stir in the mango puree.
- Allow it to cook for 20 minutes, stir occasionally.
9.Mango Raita

Ingredients:
- One cup curd
- 4 tbsp mango puree
- ¼ cup mango chunks
Method:
- Whip the curd and mango puree together.
- Top it with mango chunks.
10.Mango Mastani

Ingredients:
- One cup Mango flavored milk
- One large scoop Mango Ice Cream
- 2 tbsp assorted chopped nuts
- 1-2 cherries
Method:
- In a tall glass, pour the mango flavored milk. Add the ice cream on top.
- Garnish with nuts and cherries.
11.Mango Rice

Ingredients:
- ½ cup grated raw mango
- One tsp red chili powder
- 2 cup cooked rice
- 1 tbsp tamarind paste
- 1 tbsp urad dal
- 1 tbsp peanuts
- One tsp mustard seeds
- Two tsp oil
- 2-4 curry leaves
Method:
- Heat the oil, add the curry leaves and mustard seeds. Add the raw mangoes. Saute.
- Sprinkle all the spices and salt. Also, combine the peanuts and urad dal. Mix the tamarind paste.
- Finally, mix the rice and cook it for 3-4 minutes.
12.Mango Phirni

Ingredients:
- ½ cup mango pulp
- ½ cup rice flour
- 1 cup milk
- ¼ cup powdered sugar
- Two tsp cardamom powder
Method:
- Boil the milk and cardamom. Add the rice flour and keep stirring it until the mixture thickens.
- Pour in the mango puree. Stir occasionally.
- Turn off the heat and add the powdered sugar.
13.Peach and Mango Cooler

Ingredients:
- Four large peach, skinned and chopped
- Two large, ripe mangoes, peeled and chopped
- 1 cup fresh coconut water
- ½ cup ice
Method:
- In a blender, add the ice and crush it.
- Add the mango and peach chunks to the blender and blitz it on high.
- Pour in the coconut water and blend it again.
14.Mango Coconut Burfi

Ingredients:
- One cup mango pulp
- Two cups powdered sugar
- Two cups milk
- One cup Rava (semolina)
- 4 tbsp freshly grated coconut
- 2 tbsp clarified butter
- One tsp powdered cardamom
Method:
- Bring the milk to a boil in a thick bottom saucepan. Add sugar to the milk.
- In another frying pan, heat the butter and lightly toast the Rava until it is brown
- Add the Rava, mango pulp, coconut, and cardamom powder.
- Let it cook until the mixture thickens.
- Pour the mixture into a deep, greased plate. Let it set in the fridge.
15.Chili Mango Salad

Ingredients:
- One cup coarsely chopped ripe mangoes
- One ripe avocado, chopped
- 1 tbsp lemon juice
- Two tsp red chili powder
- Salt as per taste
Method:
- Mix the salt, red chili powder, and the lemon juice. Keep aside.
- In a bowl toss the mangoes and avocadoes.
- Drizzle the juice over the fruits. Toss them again until everything is in coating.
16.Mango Lassi

Ingredients:
- 2 cup thick curd
- 1 cup mango puree
- 2 tbsp chopped nuts
Method:
- Blend the curd and mango puree together. Add water if needed.
- Serve garnished with nuts.
17.Mango Halwa

Ingredients:
- ½ cup mango puree
- 1 cup semolina
- 2 tbsp clarified butter
- One tsp cardamom powder
- ½ cup powdered sugar
- 1 cup milk
- 4 tbsp chopped nuts
Method:
- In a thick bottomed kadhai, heat the butter. Add the semolina and toast it until light.
- Mix in the powdered sugar and semolina. Combine the mango puree and pour in the milk.
- Sprinkle cardamom powder and let it cook.
- Garnish with chopped nuts.
18.Mango Pancakes

Ingredients:
- One cup mango puree
- One cup all-purpose flour
- Two eggs
- One tsp cinnamon
- 2 tbsp sugar
- 4 tbsp milk
- 1 tbsp butter
Method:
- Combine all the ingredients and whip in a bowl. Whisk thoroughly.
- Pour the batter into a hot skillet.
- Serve hot.
19.Mango Chaat

Ingredients:
- 1 cup puffed rice
- 2 tbsp grated raw mangoes
- ½ cup namkeen
- 1 tbsp tamarind chutney
Method:
- Mix all the ingredients in a large bowl.
- Serve with a garnishing of coriander.
20.Mango Cake

Ingredients:
- One box of cake mix
- Two large eggs
- One cup mango puree
Method:
- Preheat the oven at 180C.
- Crack the eggs into a bowl, add the puree and cake mix.
- Whip the batter thoroughly.
- Bake for 30 minutes.
