1.Plain Mughlai paratha

Ingredients

  • Refined flour- 250gm
  • Wheat flour- 250gm
  • Semolina (suji)- 100gm
  • Baking powder- ½ tablespoon
  • Salt- as per taste
  • Curd- ½ bowl
  • Oil- 1 tablespoon
  • Ghee
  • Cumin seed (jeera)- 1 tablespoon

Recipe

  1. Take wheat flour, refined flour, and semolina. Mix baking powder and salt in flour. Mix curd and oil in the flour. Take lukewarm water and knead the flour. Mash and knead till it becomes a soft dough. Leave it for half an hour.
  2. Now heat the pan.
  3. Take a small lump of the dough and roll it into a circle. Put ghee on the top and sprinkle cumin seeds.
  4. Keep knife’s point in the center and cut the corner and roll it in a circle. Shape it like a round ball again and roll it.
  5. Put it in a pan and heat it till it turns light brown. Now put 1 tablespoon of ghee and cook the paratha on both sides.
  6. Serve it hot and fresh.

2.Vegetable Mughlai paratha

Ingredients

  • Wheat flour-1 cup
  • Boiled Potato- 4-5 medium size
  • Gram flour (besan)- 3 tablespoon
  • Chopped onion-3 tablespoon
  • Grated carrot
  • Green chilies, chopped- 2 chilies
  • Red chili powder-1/4 tablespoon
  • Salt- as per taste
  • Coriander leaves- ½ bunch
  • Tomato ketchup-for spreading
  • Oil
  • Ghee
  • Cumin seeds

Recipe

  1. Take wheat flour and add a small amount of oil. Knead the flour in a lukewarm water till it becomes a soft dough. Leave it for some time.
  2. In a bowl, let’s take mashed potato. Add gram flour, green chilies, red chili powder, cumin seeds, salt, coriander leaves, chopped onions, and carrot. Mix them well for stuffing.
  3. Heat the pan.
  4. Now take a small lump from the dough and shape it like a ball. Roll it. Apply potato filling on one side of the paratha as shown below.
  5. Now reverse the paratha. Put 1 tablespoon of oil on the potato stuffing and cook till it turns light brown.
  6. Spread the tomato ketchup and cut mark in the center to divide paratha into two halves.

Ingredients

  • Wheat flour-200gm
  • Refined flour-200gm
  • Salt- to taste
  • Oil- ½ cup
  • Eggs- 3
  • Chopped Onions

  • 2 green chilies, chopped
  • Red chili powder- 1/8  tablespoon
  • Black pepper- ½ tablespoon

Recipe

  1. Take wheat flour, refined flour and some amount of oil. Mix and knead the flour in lukewarm water. Keep kneading till the dough becomes soft. Leave it for some time.
  2. Now let’s prepare the inner stuffing.
  3. In a bowl, take a chopped onion, coriander leaves, chopped garlic, eggs, green chilies, black pepper, and salt.
  4. Beat it well.
  5. Now take a ball out of the dough prepared and roll it.
  6. Heat the pan and cook the paratha applying ghee on the sides.
  7. Now put the egg stuffing in the middle and fold two sides towards the center.
  8. Make sure the filling does not come out. Gently cook on low flame otherwise inner egg stuffing will remain uncooked.

Ingredients

  • Minced Chicken- 500gm
  • Wheat flour-200gm
  • Green chilies, chopped
  • Chopped tomatoes- 4
  • Chopped garlic- 10 cloves
  • Crushed ginger- 2 ½ piece
  • Ghee
  • Red chili powder- ½  tablespoon
  • Chopped coriander leaves
  • Salt- to taste

  1. Heat 1 tablespoon of ghee. When it gets hot, fry the ginger and garlic.
  2. Put in small pieces of chicken and heat it well.
  3. Add a pinch of salt and ¼ tbsp. of red chili powder.
  4. Add tomatoes and fry them. After that add onion, green chilies and chopped coriander leaves. Now keep it aside and let it cool.
  5. Now take 200gm wheat flour and some amount of oil to prepare a dough. Add some water and knead it well to make it smooth.
  6. Take a small lump from the dough and roll it.
  7. Spread some chicken mixture on one-half and seal the edges.
  8. Heat the pan and apply ghee on the pan. Fry them till it becomes light brown.
  9. Chicken Mughlai paratha is ready to be served with mutton curry.

Ingredients

  • Wheat flour- 200gm
  • Refined flour- 200gm
  • Baking powder- 50gm
  • Salt –to taste
  • Grated paneer
  • Coriander leaves, chopped

  • Red chili powder- ¼ tbsp.
  • Black pepper- ½ tbsp.
  • Oil – 3 tbsp.
  • Ghee

Recipe

  1. Take mashed or grated paneer. Add green chilies, coriander leaves, red chili powder, black pepper and salt. Mix them well, and stuffing is ready.
  2. Now take wheat flour, refined flour and some amount of salt. Add 1 tbsp. of oil and baking powder, and mix it well. Knead the flour till it becomes smooth.
  3. Leave it aside for 15 minutes.
  4. After 15 minutes, roll out a portion of the kneaded flour.
  5. Heat the pan and cook the paratha till it turns light brown from both the sides.
  6. Take the stuffing and pour it on the one side of the paratha. Spread evenly.
  7. Fold the paratha giving it a triangle shape and cook it using ghee.
  8. After it turns golden brown, serve it.

Ingredients

  • Eggs- 3
  • Minced Chicken- 200gm
  • Chopped onion- 1 bowl
  • Chopped tomato- 1 bowl
  • Chopped green chili-5-6

  • Garlic paste- 1 tbsp.
  • Red chili powder- ½  tbsp.
  • Black pepper- 1 tbsp.

  • Wheat flour- 200gm

Recipe

  1. In a bowl, take three eggs. Add chopped green chili and coriander leaves. Beat them and keep it aside.
  2. Now in a bowl of wheat flour, put a pinch of salt. Add some amount of oil and mix them well. Prepare a soft dough and leave it for some time, say 10-15 minutes.
  3. Take a skillet and heat oil in it. Add cumin seeds in the hot oil to sizzle. Then add onion. It starts turning brown. Add ginger-garlic paste to it and mix them properly.
  4. Add coriander powder, garam masala, black pepper, chicken and let chicken turn brown.
  5. Put in the chopped tomatoes and cook the mixture. Finally, the stuffing is ready.

Ingredients

  • Wheat flour- 3 cups
  • Refined flour- 2 cups
  • Oil-3 tbsp.
  • Salt- to taste
  • Baking powder- 50g
  • Minced meat-250gm
  • Chopped onion-1
  • Green chilies chopped-2-3
  • Ginger garlic paste- 1 tbsp.
  • Cumin powder- 1 tbsp.
  • Garam masala- ½ tbsp.
  • Red chili powder- ¼ tbsp.
  • Cilantro – ¼ cup finely chopped

Recipe

  1. For preparing the dough, take wheat flour, refined flour in a bowl. Sprinkle salt, baking powder, and oil. Mix them with a warm water and knead the dough to ensure the flakiness of the paratha.
  2. After the dough has been prepared, cover it and leave it for some time.
  3. Pour one tbsp of oil in pan and heat it. Now fry the chopped onion. Keep it on a high flame and add the minced meat. Fry the meat till it starts releasing water.
  4. Add ginger garlic paste, cumin powder, red chili powder, garam masala, green chili, salt and keep frying.
  5. Cook it and add chopped cilantro and mix it well.
  6. Now take a ball from the dough and roll it out.

  • Refined flour- 250gm
  • Gram flour- 2 tbsp.
  • Sesame oil- 1 tbsp.
  • Oil – 3 tbsp.

  • Garam masala- 1 tbsp.

  1. Combine flour, salt, and oil in a bowl. Mix them and knead it using water.
  2. Keep it aside.
  3. For stuffing, take peeled and mashed potatoes. Add gram flour, grated ginger, green chilies, garam masala, salt, coriander, amchur in a bowl and mix them properly.
  4. Now take the dough and roll out a small lump of the dough.
  5. Keep the stuffing in center and fold the edges tightly.

Ingredients

  • Plain flour- 2 cups
  • Refined flour- 1 cup
  • Grated carrot- ¾ cup
  • Shredded cabbage- 1 bowl
  • Bean sprouts- 4 tbsp.
  • Chopped onion- ½ cup
  • Soy sauce- ½ tbsp.
  • Green chilies, chopped- ½ tbsp.
  • Oil- 1 tbsp.
  • Salt- to taste
  • Boiled noodles- 1 cup

Recipe

  1. Take 1 tbsp. of oil and heat it on a pan. Add carrot, cabbage, onion, and bean sprouts. Mix them and add soy sauce, green chilies, salt.
  2. Stir it occasionally. If you wish to add green chili sauce to make it spicy, you can add it.
  3. Now add the boiled noodles to it.
  4. Cook the stuffing for 2 minutes, and it is ready.
  5. Allow it to cool.
  6. For making the paratha, take a bowl and combine plain flour, refined flour and a pinch of salt. Add water to it to prepare a soft dough.
  7. Now roll out a ball from the dough and shape it into a circle using a roller.
  8. Place the Chinese stuffing in the center and fold it over the filling.

  • Almonds- ½ cup
  • Cashew nuts- ½ cup
  • Raisins- 4 tbsp.
  • Pistachios- 3 tbsp.
  • Walnut- ¼ cup

  • Black pepper- ¼ tbsp.
  • Plain flour- 200gm
  • Refined flour- 150gm
  • Oil- 2 tbsp.

Recipe

  1. Take plain flour, refined flour and add a small amount of oil. Knead the flour in a lukewarm water till it becomes a soft dough. Leave it for some time.

  3. Now take a small lump from the dough and shape it like a ball. Roll it into a thin circle.
